The Squam Lakes Association pulled its docks during its Fall Workday last Saturday, October 17, and that marks the start of the quiet season around the village. Here's what changes once the summer crowd thins out. Holderness's dinner choices now depend on the calendar more than on what you're hungry for. On a Monday or a Tuesday, Walter's Basin is the only one of the village's sit-down dinner rooms posting hours. From Wednesday through Sunday you have four kitchens to pick from. On weekend mornings, a farm-stand café out on Route 175 joins the lineup.
What follows is the week as the restaurants themselves currently post it, starting with the quietest nights.
The Week at a Glance
| Day | Morning | Dinner |
|---|---|---|
| Monday | Squam Lake Marketplace, from 7:30 a.m. | Walter's Basin |
| Tuesday | Squam Lake Marketplace, from 7:30 a.m. | Walter's Basin |
| Wednesday | Squam Lake Marketplace, from 7:30 a.m. | Walter's Basin, Inn Kitchen + Bar, Van Horn Dining Room, The Isaac |
| Thursday | Squam Lake Marketplace; Tractor Shed is closed | All four |
| Friday | Squam Lake Marketplace; Tractor Shed from 7 a.m. | All four |
| Saturday | Squam Lake Marketplace; Tractor Shed from 8:30 a.m. | All four, with The Isaac opening at 3 p.m. |
| Sunday | Squam Lake Marketplace; Tractor Shed from 8:30 a.m., breakfast only | All four, with The Isaac opening at 3 p.m. |
All of these are the hours posted on each business's own site in mid-October 2026. Off-season schedules can shift without much notice, so call before you drive over.
Monday and Tuesday Belong to Walter's Basin
Walter's Basin posts 11:30 a.m. to 9 p.m. every day. Inn Kitchen + Bar and both Van Horn dining rooms run Wednesday through Sunday, so the start of the week falls to Walter's Basin.
That puts a lot on how Walter's Basin seats people, and the rules are simple. The dining room takes reservations only for groups of five or more. The lounge, the bar and the Squamside beach bar are always first come, first served. Two people on a Tuesday just show up. A table of six calls ahead at 603-968-4412, extension 5.
The lounge also changes jobs for the winter. From November through April, Walter's Basin books it as private space for groups of 15 to 30, pitched for birthdays, anniversaries and holiday parties. If your road association or office wants a December gathering that isn't in somebody's living room, that's the room to call about this month.
Wednesday Opens Up the Map
Midweek is when Holderness has the most going on. Wednesday brings back two kitchens that keep similar hours but feel nothing alike.
Inn Kitchen + Bar sits at the Squam Lake Inn and has been cooking since 2005. It serves its full menu and takes reservations Wednesday through Sunday, 5 to 8:30 p.m. The kitchen describes its menu as seasonal, built with local farmers and a fishmonger, with herbs and flowers from the inn's own gardens going into the cocktails and entrées. It also takes online orders, which helps on a raw November night when you'd rather eat at home. One seasonal piece is already finished for the year. The inn's Barn INN Bloom flower shop posted Friday and Saturday hours only through September.
Van Horn Estate is the other Wednesday reopening, and it's where the village has changed the most.
The Manor on Golden Pond, Under Its Original Family's Name
Plenty of people in town still say "the Manor." The sign and the website now say Van Horn Estate, and the main building is called The Manor as a nod to the property's most recent name, according to a Laconia Daily Sun profile of the estate. The new name goes back to Isaac and Clara Van Horn, who built the place as a private vacation home between 1904 and 1907. The Daily Sun reports that the property was home to the Holderness Photographic Colony in the 1940s and has run as an inn under various names since the 1950s.
Hannah and Robert Fougere have owned the estate since 2023. The Daily Sun credits them with adding The Isaac Bistro & Pub as a second, more casual option next to the formal Van Horn Dining Room. Both are open to the public, not only to inn guests. Hannah Fougere told the paper what they're aiming for:
"The most important thing is to make people feel like, 'Wow, that was amazing money spent. I'd love to do that again.'"
In practice the two rooms work very differently:
- Van Horn Dining Room runs Wednesday through Sunday, 5 to 9:30 p.m., with the last reservation at 8:15. Guests must be 12 or older. There's a wood-burning fireplace, white linens and a wine list with a Wine Spectator award. Executive Chef Kevin Schmidt trained at Johnson & Wales, is a certified sommelier, and is known for Northern Italian and French-Mediterranean cooking, per the Daily Sun.
- The Isaac keeps the same Wednesday-through-Sunday evening hours. Its fall schedule opens the doors at 3 p.m. on Saturday and Sunday, and the estate describes leather chairs by the fire. Of all the dinner rooms in this lineup, it's the only one posting a mid-afternoon weekend start, which makes it the easy pick after a cold Sunday hike.
The estate stays open year-round. The Daily Sun reports that it draws the summer lake crowd and winter skiers alike. One thing isn't on the dining page. The Mirador, the event venue that opened in 2024 and holds up to 140 guests, books out the whole property for weddings. When that happens, the restaurants close along with The Manor and the cottage. On a weekend, call before you head up 31 Manor Drive. The estate's Seasons Spa is still listed as nearing completion.
Thanksgiving is the next date to mark. Van Horn is serving Thanksgiving dinner on Thursday, November 26, from noon to 3 p.m., by phone reservation at 603-968-3348. That's five weeks from this Thursday, and the estate's lunch-hour seating leaves your evening open.
Weekend Mornings Run Up Route 175
Breakfast has its own calendar. The steady option is Squam Lake Marketplace, open 7:30 a.m. to 5 p.m. daily. It shares a lineage with the dinner room down the road. The Squam Lake Inn crew reopened and renovated the Marketplace in 2012. So one group runs both your morning stop and one of your Wednesday dinner options.
From Friday through Sunday, Tractor Shed Café and Farm Stand at 808 NH Route 175 adds a second choice. Its new fall and winter hours list Thursday as closed, Friday 7 a.m. to 2 p.m., and Saturday and Sunday 8:30 a.m. to 2 p.m. The hours page breaks it down further:
- Friday: breakfast 7 to 11, lunch 11 to 2
- Saturday: breakfast 8:30 to 11, lunch 11 to 2
- Sunday: breakfast only, 8:30 to 2
Sunday is the day that catches people. If you show up at 12:30 expecting a sandwich, you'll find a breakfast menu, so plan accordingly.
Weekend daytime has one more deadline. The Squam Lakes Natural Science Center's Live Animal Exhibit Trail is open daily through November 1, from 9:30 a.m. to 5 p.m., with last admission at 3:30. A Saturday breakfast at Tractor Shed, a late morning on the trail, and The Isaac opening at 3 p.m. fit into one day for about one more weekend this season.
Planning Around the Gaps
Putting it all together:
- Monday or Tuesday dinner: Walter's Basin, and call ahead if you're bringing five or more.
- A Wednesday or Thursday dinner with a reservation: Inn Kitchen + Bar until 8:30, or the Van Horn Dining Room with the last booking at 8:15.
- Weekend afternoon: The Isaac from 3 p.m.
- Thursday morning: the Marketplace, since Tractor Shed is closed.
- Sunday lunch: the Marketplace or a late breakfast at Tractor Shed, since the Shed doesn't serve lunch that day.
- A group in winter: Walter's Basin's lounge for 15 to 30, available November through April.

Off-season hours can change week to week, so a quick call is still the best plan. If you're weighing a bigger Holderness change than where to have dinner on Tuesday, Juli Kelley knows this village season by season and is glad to talk it through. A free home valuation is an easy place to start.
